As far as I know, the Sans is Steven theory came to be as only a parody of Matpat's theory. This one presented Steven just getting cancer. The Crystal Gems commit suicide, and Steven's corpse, now only his skeleton, would become Sans. One of the points in this, and the most infamous one, is that "Sans" is an acronym; "Steven After Not Surviving."
