For these pork hocks, I trimmed them, seasoned them, got my pellet smoker running at around 275F/135c using Pecan pellets and then put my pork hocks in. I let them go for around 2.5 hours until they had developed a nice colour and the rub had set on the meat nicely, the internal temperature at this stage was around 185F/85c. Wrapped with a little apple juice and butter and back on until it was 203f internal. Rested for 2 hrs wrapper in a towel in a cooler then shredded like butter. Delicious pulled pork! Try the no wrap method over night and it turned out super tender and juicy. Low and slow is a game changer. . For this cook I am using a pellet smoker and hickory pellets/cherry. You can use what ever cooking method you like. -set your smoker at 225 degrees and let it come up to temp. -8 to 10 lbs pork butt/ shoulder.
