Pinching dahlias: Why? It helps plants to produce more lateral (sideways) growth. This means more stems and more flowers. It also means thinner, more useable stems for floral arrangements and bouquets. My tiny garden produces tulips and peonies in Spring, calla lilies and bellflower in early summer, and hydrangeas, phlox, and dahlias in late summer through Fall.
